Crêpes are a favorite of many in both their savory and sweet varieties, as the thin pancake-like shell can be customized and made with a wide array of fillings. While most recipes are very light, this recipe is by Chef James Tahhan is a decadent variation with rich ingredients.
Ingredients
1 cup flour
2 eggs
1/2 cup milk
1/4 cup water
1/4 teaspoon salt
2 tablespoons melted butter
1 cup dark chocolate chips
1 cup heavy cream
1 cup mascarpone cheese
fresh mint
Directions
Prepare pancakes dough by mixing all ingredients in a bowl.
Then in a nonstick pan add a tablespoon of the dough and stretch it across the surface of the pan. Let cook and then turned around (about a minute per side).
For the chocolate ganache cream mixed with chocolate chips and we melt over low heat. We leave aside.
When ready we take a crepe pancakes, and fill with a dollop of mascarpone cheese and a spoonful of chocolate ganache. We wind and finally we drop a little bit of chocolate ganache over the crepes.
Decorate with mint!
