Avocados are a staple to any healthy diet, as the fruit (yes, it is a fruit) is rich in good fats and is rich in potassium. If you're looking for a recipe to incorporate avocado without the staple guacamole, then consider this recipe by Chef James Tahhan for Avocado Soup with Shrimp. The recipe requires a handful of ingredients, but making it is fairly simple and requires a pot and a food processor.
The ingredients are: 3 avocados, 1 cup vegetable brother, 2 tablespoons cilantro, 2 tablespoons lemon juice, 2 tablespoons chives, 2 ears of corn, jumbo shrimp, 1/4 cup heavy cream, 1 teaspoon smoked paprika, salt and white pepper to taste.Simply place the avocado in a food processor with the vegetable broth, onions and cilantor and process it for one minute. Then remove the mixture and add the cream. Set this aside. In a pot, add olive oil, corn and beans, and fry the ingredients on high heat until they caramelize. Then add smoked paprika and shrimp. Sauté everything and then serve over the cold avocado soup.
