A fried rice is a great way to get your daily quota of protein and vegetables without spending too much time. While fried rice is traditionally made with white rice, a brown rice substitute makes it healthier, as brown rice is associated with a reduced risk of Type 2 diabetes amongst other health benefits. And if you're on the go, a fried rice requires little prep and won't leave you washing a sink full of dishes.
Below is a recipe from Chef James Tahhan featuring brown rice and lean beef.
INGREDIENTS:
1 cup brown rice
1 carrot
1 celery
1/2 onion
3 cloves garlic
1 teaspoon ginger
2 tablespoon soy sauce
1/2 pound lean beef
1 egg
DIRECTIONS:
1. Prepare the brown rice, to taste.
2. While the brown rice is cooking, saute the vegetables in a pan with the meat over high heat.
3. Once the vegetables and meat are properly cooked, add the rice to the pan and fry it with the vegetables and meat.
4. Add soy sauce and egg. Mix well and serve.
