Ingredients
1 lb mixed tomatoes (green, Red, Yellow)
1/2 cup chopped chives
10 sprigs of thyme
1/2 cup olive oil
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
3 ounces feta cheese
Directions
In a blender, place the oil, vinegar and mustard. Be sure to season with salt, pepper and liquefy, and leave aside. Then slice the tomatoes into thick slices and season them with salt, pepper and olive oil. Grill on high for 2 minutes, being sure to flip them to ensure even-sided cooking. Remove from the grill and serve on a plate with chopped chives and balsalmic vinaigrette. Garnish with feta cheese crumbles.
