Gazpacho

Gazpacho is a vegetable soup, that has a tomato base, that is traditionally served cold. It supposedly originated in a region of Spain known as Andalucía. This recipe by Chef James Tahhan is a great recipe to try, as it calls for merely a handful of ingredients and requires little cooking time.

Ingredients:

2 pounds tomato
1/2 green pepper
1 tablespoon sherry vinegar
1 clove of garlic
1 cucumber
1/2 cup olive oil
2 slices of baguette bread grilled golden
Chives
cherry tomatoes
Cucumber cut into large slices (mandolin)

Directions

In a blender add: Tomatoes, peppers, sherry, peeled cucumber, garlic, oil and liquefy until it reaches a creamy texture. Serve over vegetables raw or browned in a pan, slice of bread and finish with a good olive oil.
