Eggplant sauteed with cherry tomatoes and parsley

If you love veggies then this dish is the way to go! Stuff eggplants are super easy to make and this vegan-friendly recipe is delicious enough to serve to the most carniverous friends. This recipe by Chef James Tahhan is simple enough for even the amateur chef.

INGREDIENTS

2 eggplants
4 garlic cloves threads
1/2 lb cherry tomatoes
1 shallot
parsley

DIRECTIONS

Cut the eggplants in half, and then cut out the flesh into cubes. In a skillet, sauté the garlic eggplant cubes and tomatoes for 3 minutes. Then add the parsley, garlic and shallots for another minute. Place the filling inside the eggplant halves and bake in the oven until cooked.
