Chicken teriyaki is an easy dish to make when you're craving something delicious and don't want to spend too much time. It's also ideal for the person who is always on the go, as the chicken can be marinaded in advance and prepared at your convenience. Here is a great chicken teriyaki recipe from Chef James Tahhan.
INGREDIENTS
1 lb boneless and skinless chicken meat
4 tablespoons soy sauce
3 garlic cloves, grated
3 tablespoons minced ginger
2 tablespoons brown sugar
2 tablespoons sake
1 teaspoon rice vinegar
1 red pepper
1 green pepper
1 onion
2 carrots
chives for garnish
1 cup white rice
DIRECTIONS
1. In a bowl add soy sauce, garlic, ginger, sugar, sake and vinegar.
2. In this same bowl add the chopped chicken into 1-inch pieces and marinate for about 20 minutes.
3. In a casserole dish, add a little sesame oil and vegetables begin to brown and then add the chicken (without the marinade) and brown it for so cooked through over medium heat.
4. Once cooked remove it from the casserole and add the liquid it marinade, turn up the heat to high until the liquid becomes a syrup.
5. Once you reach the desired consistency in the sauce put out the fire, and return to pot chicken and vegetables.
6. Mix well and serve over white rice with a little onion.
