Chicken Stuffed Sweet Potatoes

Sweet potatoes are a great vegetable -- and a wonderfully healthy alternative to traditional potatoes--since they nutritious. They are an excellent source of Vitamin A and are rich in fiber. While they are not lower in calories than traditional potatoes, they are overall a healthier option to regular potatoes. Chef James Tahhan's recipe for Stuffed Sweet Potatoes is a fantastic source for protein and delicious as well.

INGREDIENTS

1/2 lb kale
8 slices bacon, low-fat turkey
5 pasilla chilies (dried, seeded, and finely chopped).
1 cup chicken stock
10 oz white beans
4 sweet potatoes
1/2 onion
4 cloves of garlic
chives

DIRECTIONS

1. Preheat oven to 350 degrees.
2. Place foil around each sweet potato and bake for 45 minutes to 1 hour.
3. Meanwhile, in a pan, start sauteing the chopped bacon into thin slices.
4. Then add the onion, garlic and peppers and continue to saute.
5. Then add the kale and beans and cook gently until the cabbage is integrated with the rest of the ingredients in the pan.
6. Add chicken broth and let it reduce until you can no longer see the broth.
7. Turn off the stove and leave the ingredients to one side.
8. Remove the potatoes from the oven and make an incision in the middle of it, vertically.
9. Add a couple of tablespoons of the cabbage-meat filling. Drizzle with oil and serve.
