Nachos

Nachos are the perfect appetizer as they are both delicious and a crowd pleaser. You can make them in a big batch or a smaller one and serve it as an appetizer or enjoy it as an entree. The customizable dish is filled with delicious goodness and this recipe from Chef James Tahhan is loaded with all the garnishings you could ever want.

INGREDIENTS

1 bag of tortilla (tortilla chips)
1 can red kidney beans
1 onion
2 red chillies
1/2 lb ground beef
2 tablespoons tomato paste
1 cup chicken broth
4 cloves of garlic
1 sausage Andouie
Jalapenos
sour cream
Mexican cheese, grated
cilantro

DIRECTIONS

1. In a pot, start by sauteing the sausage until it is cooked, and then place it to the side.

2. In the same pan, fry the onion, red chillies garlic, add the meat, tomato paste and chicken broth.

3. Place the sausage back in the frying pan and allow it to cook until the mixture becomes thick. This should take about 40 minutes over medium heat.

4. Thirty minutes in, add the beans and set aside.

5. Assemble the nachos by layering tortillas, followed by beef stew with chorizo, cheese, minced jalapeno, cheese, and finish sour cream and cilantro.
