Tacos are great for when you want to eat light and fresh and this recipe by Chef James Tahhan provides a Hawaiian twist to it by garnishing the tacos with pineapple salsa.
Ingredients
4 fillets of tilapia
Juice of 1 orange
Juice of 1 lemon
1 cup cilantro
2 tablespoons honey
1/4 cup vegetable oil
5 corn tortillas
For pineapple salsa
1/2 whole pineapple
1/2 onion
1 jalapeno
1 orange bell pepper
Juice of 1 orange
Juice of 1 lemon
3 tablespoons oil
Directions
In a bag marinate tilapia fillets with orange juice, lemon honey, cilantro and oil for 1 hour. Then take it to a hot pan and brown them for about 4 minutes.
Then refinish pineapple and olive oil and took a hot grill where doramos for about 3 minutes per side and removed. Repeat the process with the onion and red pepper. Then finely chop the pineapple, peppers, and onions and place in a bowl, followed by orange juice, lemon juice, olive oil, salt and pepper. Finally we take a tortilla, warmed slightly, add the fish and sauce over grilled pineapple.
